NEW YEAR SPECIAL TOMATO COCKTAIL


I know you all are preparing for a happening New Year party. Me too. New Year Party is a reason to coming together, meeting people, to share a piece of their heart all gives New Year Party a bright color of happiness."Sharing" and "caring" become the primordial tune of New Year Parties. Today I am going to one of my friend’s theme party. Signing off with this lovely Tomato cocktail for you, a perfect cocktail for chilled winter nights. HAVE FUN !

INGREDIENTS:
Worcestershire sauce     ½ teaspoon. 
Lemon Juice 1 tea spoon.
Tomato Juice 100 ml.
Salt and pepper according to taste
Ice cubes few

PROCEDURE:
Take a shaker and put all the above ingredients in it . Give one or two good shake. Then serve it in your favorite cocktail glass. I hope you will like the hot tangy taste of this drink in the New year party night.

FRENCH TOAST WITH FRESH PAPAYA



Hope you have enjoyed a great Christmas and now preparing to rock the New Year party. On the Christmas day we went for a family picnic nearby and enjoyed the whole day over there, but the most fun part is on our way back home, one of our friend just ask to visit his family farm house and we are so happy to see that he planned a grand surprise party for us. There was a right blend of creativity, hospitality and fun. We share some great music and food. With all other delicious dishes they served a very delicious dessert French toast with fresh papaya. I just love it. I am still stuck, so thought why not share that delicious dessert recipe with you all so that you can make your dessert option for the New Year party. I am giving you the healthy version of the recipe but if you want it in the royal way it is always your sweet choice.


INGREDIENTS:
Bread slice        4(½ to ¾ inch thick)
Yoghurt  1½ table spoon
Egg                   2 
Vanilla essence       few drops
Salt a pinch
Unsalted butter/
Diet butter 1 table spoon (or as required)
Ripe papaya mashed 4 table spoon
Ripe banana mashed 2 table spoon
Glazed walnut 2 table spoon
Maple syrup as you wish
Vanilla ice cream a scoop ( optional)

PROCEDURE:
In a large bowl whisk together the egg, yoghurt (instead of yoghurt you can use milk), vanilla essence and salt. Those who want it a bit little sweet you can add a teaspoon of sugar or sugar substitute but I don’t prefer that, so I go without it. Beat until all the above mentioned ingredients are well combined. Place a skillet on flame and melt the butter, dip each side of the bread into the egg mixture and thoroughly coat it (dripping the excess),add to the pan, and cook until both sides are done, it may take 1 to 2 minutes for each side to cook.
Transfer them on a serving plate. Now in a small bowl mix the mashed papaya, banana (if you like you can add one boiled mashed egg) mix them well. Spread on the French toast garnish with glazed walnut and drizzle with maple syrup. To make it more exotic you can give a scoop of vanilla ice cream above it and your delicious yummy New year party dessert is ready to serve.

DELICIOUS CHRISTMAS MELTING MOMENTS COOKIES





I know everyone of you are ready with all your best recipes for the Christmas day. I want to add another delicious cookies on that list. I hope you all will love the taste of these delicious cookies. Especially those little relatives of mine love this very much. Hope all little ones and the grown up kids of your house will also love this Christmas cookies.  I am taking a short break from watching my weight and indulge in such exotic recipes which have  more calorie intake but I think when we share a piece of such high cal food with all our loved ones it  can do any harm because we are surround with the realm of positive energy and God also bless such happy gatherings. But make sure not to make it too much after all everyone love you and want you to be happy and healthy for all the days to come. Be in love , be in happiness and taste this delicious  melting moments !
INGREDIENTS:
Flour                            150 grams
Butter                          120 grams
Powdered sugar          120 grams
Vanilla essence           few drops
Egg                               1
Chocolate cornflakes  1 cup


PROCEDURE:
Take bowl take butter and powdered sugar and mix well then add flour and now take a small bowl beat that one egg and mix just half of it and also add the vanilla essence in it . Mix well, and make a soft dough. Now from that dough take small portion and give  it a cookie shape then slightly  dip it in water and press on cornflakes . Now in a greased baking tray place those cookies and cook those cookies for 20 to 25 minutes or till done.

As Burton Hillis  says The best of all gifts around any Christmas tree:  the presence of a happy family all wrapped up in each other. So Enjoy and  don’t forget to tell me how you melt lol !!

DELICIOUS ORANGE CHRISTMAS CAKE


Hi friend the long awaited festive week is on. How can a Christmas week start without some delicious cake recipe? Today I cooked a yummylicious cake which is love d by both my young and grown up kids of my house. So I am sharing this delicious Orange Christmas Cake with you. I wish and hope I could invite you all and share those chunks of love with you all. But I am sure you will feel my love if you make and taste this Orange Christmas Cake.

INGREDIENTS:


Flour                   250grams
Egg 3
Unsalted butter 150grams
Powdered sugar 1 big cup
Orange essence 1 teaspoon
Orange zest 1 teaspoon
Dried ginger grated ½ teaspoon
Baking powder 2 teaspoon
Orange juice 1 teaspoon
Walnut chopped 2 tablespoon
Red cherry 10
/orange wedges 10

PROCEDURE:
In a bowl mix baking powder and flour. Take another bowl then take eggs in it with hand beater beat it until it become fluffy, foamy and rises. Now in another bowl mix well butter and powdered sugar with a wooden spoon. Now mix the beaten egg and then mix the whole thing slowly and softly. Add orange zest and orange juice keep mixing. Now add the flour mixture in it and mix well. When the mixture become soft cream like stop beating the mixture. With a spoon take the mixture and let it drip and check that the mixture is in folding well or not. If it is folding well that prove that the mixture is well ready to go for bake. Brush butter in your favorite cake mould then pour the mixture. Mix little flour with chopped walnuts and sprinkle above. Top the with sliced cherry then bake in a preheated oven for 30 minutes or till done. You can make it more delicious after the cake is done, in a sauce pan cook 1/3 cup of orange juice, sugar and butter in medium flame and then drizzle over the cake. Garnish with orange wedges. Your delicious orange cake is ready to serve with hot coffee .

CHRISTMAS SPECIAL STUFFED BUN


Christmas is a time for families, fun and festivities! A time for Santa, stars and singing carolers. A time for wonderful gifts and twinkling lights and of course a time of family gathering and holiday meals. While you relish hot cocoa and gingerbread cookies there is one more great Christmas recipe popping out from my blog bag. Yes it is a delicious chicken stuffed bun. I am sure you will love the taste.
INGREDIENTS:

Chicken paste 1 bowl
Onion 1 finely chopped
Green chilly 1 finely chopped ( optional)
Milk 250ml
Yeast 1teaspoon
Flour 3 ½ cup
Castor sugar 1 teaspoon
Egg 1
Vegetable oil 1tablespoon
Salt and pepper according to taste


PROCEDURE:
Take milk in a bowl and mix yeast with it . Then micro cook it for 2 minutes. Now take flour in a big bowl, add castor sugar, salt , egg white, oil and the warm milk. Knead it well and make a soft dough. Now in airtight container leave the dough for 3 hrs. Don’t refrigerate . Now for stuffing take another bowl mix chicken paste with chopped onion, green chilly or pepper ( according to your choice), salt. After that take out the bun dough and knead it , then shape them into balls. Flatten them into small disc , then place the stuffing in the middle . Roll it round or into any of your favorite shape. Leave it for another 10 minutes.
Now in a oven which was preheated for 30 minutes in 180degree centigrade place the stuffed buns , cook for 15 minutes then bring out and brush with egg wash (mixture of egg yolk and 1 tablespoon of milk ) cook for another 6 minutes in convection mode until golden brown. (Keep a check on the baking time as each oven temperature and time varies. Some of them have a mind of their own. ) Serve with tomato sauce or simply with peanut butter as a breakfast with hot coffee or tea. This is healthy and delicious.

GREEN BRUSSELS SALAD FOR CHIRISTMAS


The fun time and the happy time of the year is once again coming .Christmas is just days away and so is New Year. I know you are very busy but are you bit worried how to present some healthy Christmas dishes for your loved ones?
Don’t worry be happy. Your friend is always there to give you some healthy delicious food that will rock your holiday dinner table. This green salad with Brussels sprout will make you a Brussels fan and great side dish for your Christmas menu.

INGREDIENTS:

Brussels sprout 4 cups trimmed and halved
Mushroom ½ pound (whole)
Butter /Diet butter 4½ tablespoons
Garlic 2 cloves minced
Parsley handful chopped
Walnuts ½ cup toasted
Fresh lemon juice 1 tablespoon
Salt and pepper according to taste



PROCEDURE:

Wash the Brussels sprouts well and dry with paper towel. Cook the Brussels sprout in a pot of lightly salted water for 15 minutes or until they are fork tender. Strain all the water and set aside. Now take another skillet a little big heat butter add the minced garlic stir then add the mushroom stir until lightly browned. Toss the Brussels sprout with mushroom . Adjust seasoning sprinkle parsley lemon juice. Toss again. Then serve warm with chopped walnuts. I am sure you will love the taste. I am waiting to know whether this green salad add color to your life or not ?

ORANGE HOT COCOA


One of my favorite holiday drink is orange hot cocoa. As the temparature goes down and the winter evenings need some warmth, this rich creamy European style drinking choclate gives different touch to my usual cup .I hope you too will like the taste.
INGREDIENTS:

Nonfat milk 2 ¼ cups
Unsweetened
cocoa powder ½ cup
Sugar ¼ cup
Salt a pinch
Corn starch 1 ½ tablespoon
Orange extract a couple of drops (according to taste)

PROCEDURE:

Take a sauce pan and mix milk, cocoa, sugar and cornstarch. Cook over medium heat, whisking constantly until it comes to boil. Then remove from heat add the orange extract mix well. Serve it in your favorite demitasse cup. You can add orange extract or you can go with out it but this drink will definitely fill your winter evening with a pleasure to be shared. So Enjoy!

DELICIOUS PARSLEY PRAWN


As the festive season is on I try to find out recipes that will be unique, fast to cook and very delicious to taste. So I begin my recipe hunt and the first pearl that I found in this funfilled tasty hunt is this wonderful seafood recipe. This prawn recipe will hardly take 10 minutes to cook with a little of prior arrangement. I know you are in hurry so I don’t want not waste a single minute and give you the recipe.

INGREDIENTS:
 
Prawn 10 pieces
Greek yoghurt 2 tbsp
Parsley 2 tbsp finely chopped
Butter/diet butter 1 tbsp
Cliantro handfull
Tomoto puree 3 tbsp
Green chilly 1 (optional)
Garlic 1 tbsp chopped
Sugar ½ tsp (optional)
Salt and pepper according to taste


PROCEDURE:

First peel, devein and wash the prawn. Take bowl put greek yoghurt (or hung yoghurt) , add salt, pepper, choppped parsley in it mix well then add prawn mix well . Keep aside for 30 minutes.Make a fine paste with cliantro and green chilly.
Now put your pan on medium flame add butter let it melt then add chopped garlic .Then add tomato puree stir then add the cliantro paste and the marinated prawn . Mix well . Give 4 to 5 tbsp of water and sugar, salt and pepper. Let it cook for 1 to 1½ minute. Your delicious parsley prawn is ready.
Serve it with bread. This seafood recipe I am sure will add special touch in your festive season dinner .

THANKSGIVING LEFTOVER TURKEY SOUP


I hope that you all have spend some lovely time and a memorable feast. After that lovely time I know many of you are worrying about those leftover. As you know I always want my friend to be stress free so I came up with a wonderful thanksgiving leftover recipe. I hope this leftover delicious healthy soup will soon be your chart topper.
INGREDIENTS:

Homemade or
canned chicken
or turkey broth 6cups
Carrot 2 peeled and minced
Fresh corn niblets 1½ cup
Cherry tomato 1 pint
Vegetable oil 1 tsp
Green onion ¼ cup
Garlic chopped 2 tsp
Chipotle pepper
(canned) 1 tsp finely chopped
Cooked Turkey 1 cup shredded
Lime 2
Ripe avocado 1
Mayonnaise 2 ½ tbsp
Fresh cilantro 2 tbsp finely chopped


PROCEDURE:


In a large pan dry roast the cherry tomatoes over high heat. Then set aside in a small bowl. Repeat the process with corn until lightly charred. Keep it in a bowl. Now in that pan give vegetable oil then sauté onion ( don’t use the dark green ends we will need it for garnish),garlic and chipotle peppers, carrots in medium flame. Now add the stock and shredded turkey bring to boil then reduce the heat to simmer. Chopped roughly the roasted tomatoes and then add it with roasted corn. Season with salt and pepper. Your delicious healthy Mexican flavored soup is ready to serve . But before doing it take a bowl then mashed the avocado, add juice of half lime, mayonnaise, chopped cilantro and salt and pepper. Whisk the whole thing into a fine creamy mixture your avocado cream is ready. Serve the soup in bowl and then topped it with avocado cream. The HOLLIDAYS are here again, and we all know
how fast those extra 10 lbs can creep up on us
from Thanksgiving thru New Years.

As if this season wasn’t stressful enough, with
getting ready for visitors, buying presents, and
entertaining the kids during school breaks, who has
the extra energy to add waistline worries to the
list of things to do?

Most of us let ourselves go….just a little… and then
spend the first few months of the new year trying to
shed those holiday pounds.

Well, no more New Year’s weight loss resolutions!

I’ve compiled some great tips for you to print and
read each day that will help you not only keep your
figure during the holidays, but may also help you shed
a few pounds in the process and MOST of all for
YOU TO HAVE OPTIMUM HEALTH.

Imagine that! Wouldn’t it be nice to have a different
New Year’s resolution this year? Something other than
losing weight?

1. DRINK HALF YOUR BODY WEIGHT IN OUNCES

This brings us to our second point.
Along with taking a daily fiber supplement,
increasing your water intake is one of the most
beneficial steps you can take for improving your
health and controlling your weight.

Try replacing juice, soda and alcoholic beverages
with water as often as possible. This might not be
easy during the holidays but every little bit helps.

If you are consuming alcohol or a lot of coffee,

intake since alcohol and caffeinated beverages can
cause dehydration and increase acidity in the body.

Water not only suppresses your appetite, but it also

I have practiced this tip for over 12 years and it has
helped me with digestion.especially since i have celiac
disease.

The five course meals we eat during the holidays can
really reap havoc to our digestive system.

Especially when we are mixing many different kinds of
food that our bodies are not used to consuming on a
regular basis.
The principles of food combining teach us how certain
foods work together to enhance, and ease, digestion.

One rule of thumb is to avoid eating carbohydrates and
flesh protein together in the same meal. For example,
if you are having a big juicy steak or a big slice of
turkey, instead of reaching for rice, potatoes or any
other carb, you can enjoy these meats with a fresh salad
or some steamed vegetables.

Another food-combining tip: have your fruit first thing in
the morning on an empty stomach and wait a much after your
meal to enjoy dessert. Your food is not running away so pace
yourself, besides the food taste best the next day.

4. WATCH THOSE CARBS

Based on your blood type carbs made from wheat, barley and
rye may be bad for you. This is common for Type O blood
are naturally avoid grain that contain gluten. It is like
putting diesel in a car that should use gasoline, when people
these carbs it then develops in to celiac disease,

The sad thing is millions have this disease have the disease
and do not know it.This is the MOST misdiagnosed condition ever

Moderation is Key, over consumption of refined carbohydrates,
such as white bread, pasta, rice, and sweets, causes your

body that it is full. Trust yourself that the small plate
you’ve filled with food is enough to satisfy your dietary

yourself, then wait 20 minutes, and if you’re
still feeling hungry,
then, and only then, reach for seconds.

7. CHEW YOUR FOOD SLOWLY

As a child I was taught to chew each 32 times, and since
digestion begins in the mouth, chewing your food well is
essential for proper digestion and nutrient absorption.

Chewing slowly will also give your
body a chance to signal that it is full much sooner, and
hopefully get you to stop eating before you’ve eaten too much.

Basically, the slower you eat the less food it takes to fill
you up. People who eat slower tend to eat less and also weigh
less.


8. I LIKE TO MOVE IT MOVE IT PHYSICALLY FIT

The last thing you want to think about during the holidays
is exercise, but that doesn’t mean that you can’t get moving
for at least a few minutes each day. Spending time with family
or traveling can make it difficult to make time for physical
fitness.

But, as we are eating more than usual, we can easily burn
some extra calories by adding a bit of exercise a few times a
week, even if it’s just a brisk walk outside or a quick exercise
video.

9. DON'T WORRY BE HAPPY....

Being overly rigorous about what you’re eating and worrying
about gaining weight after every bite can actually make you
more likely to gain weight. Try to not to Worry and enjoy
the holidays. Many of us tend to overeat when under stress
and pressure. If you do gain a couple of pounds you can
always cleanse your body with the colon and get back on
the right track

10. TAKE A SCOOP FIBER EACH MORNING

This is something I’ve been doing for more than twenty
years now in order to stay regular and to help keep my
weight under control.

I recommend one scoop before breakfast and a seasonal
colon cleanse. Fiber helps reduce your appetite by giving
you a full feeling before meals. It also reduces the transit
time of food in your bowels as it helps keep things moving
along smoothly and quickly while insuring regular bowel
movements.

There are two important things to remember when adding
fiber to your diet. First, increase your fiber intake slowly
so your body has time to get used to it, and second, make sure

A Punch With Green Tea


A friend of mine visited me a day before and gifted me a box of good quality green tea and shared this wonderful green tea punch recipe with us. It is so delicious that I thought why not share with you all.
I think by now we all know the health benefit of green tea. But for those who have missed few of them take a quick look.
Green tea has significant healing powers and may lower cholesterol, slow up the wrinkle process. It may also help shed those unwanted pounds!
Studies on the health benefits of green tea pointed to an increase in metabolism and fat burning of 78 calories per day involving adults. Green tea may help prevent arthritis. May increase metabolism and accelerate weight loss. It may also slow the aging process and boost immunity. Green tea may also be useful in fighting infections. Finally, green tea - as well as all teas, are natural, calorie free, fat free - as long as you don't add milk, sugar, honey, cream, artificial flavorings - etc. Tea is delicious and makes a great beverage whether hot or cold. And green tea, as well as oolong tea, just might help boost metabolism, burn fat and assist you in dropping pounds!

INGREDIENTS:

Fresh pineapple 1 peeled cored and cut into chunks
Green apples 2 large washed and sliced
Fresh ginger 1 ¼ tsp chopped
Green tea 1 cup brewed and chilled
Crushed Ice 1 cup
Mango sorbet 1 cup (optional)


PROCEDURE:

Juice the pineapple, apples and ginger in your juicer machine. Now mix the juices with tea . Pour it in serving glass of your choice and put some crushed ice above it. For those who are not anxious in dropping or gaining some extra pounds for them instead of using crushed ice, use mango sorbet and stir it in the tea and fruit juice mixture then serve. Your delicious punch is ready

A healthy thanksgiving

How to enjoy Thanksgiving Dinner without the unwanted stuffing
Most people gain 10-15 lbs over the holiday season. Not only does that cause the potential for health problems but it also causes the body additional stress.
This added stress also causes our immune function to be lowered providing the potential for colds and flu etc. Make giving thanks with family and friends the focus of your gathering.
The key to unwanted “ stuffing “ is everything in moderation. If you are cooking you have control over what is served at the T.G table, if not you have the choice over what you consume. “ Ah Ha” you can’t blame anyone else!
Here are a few tips to help you navigate the most fattening (2000 calories on average) meal of the year.
  1. Eat breakfast. Don’t go hungry as you have the potential to overeat.
  2. Drink plenty of water up to hour before and one hour after the meal
  3. Eat slowly. It takes 20 mins for the brain to catch up and register you are full.
  4. Say no to seconds
  5. Careful with alcohol. You have a tendency to eat more and it is loaded with calories
  6. Big one! Don’t take more of the fattening food home with you. No one needs more of the most fattening meal of the year
  7. Get some exercise either before or after the meal
  8. Watch portion control. There are often a lot more items on the menu than a typical meal. Take a little of everything.
Here is my ideal Thanksgiving Dinner…
Start: Butternut/ Pumpkin soup.
Dinner: Roasted organic turkey breast w/ herbs and a little sea salt
Roasted Root Vegetables
Green beans with garlic and almonds
Brussels Spouts
Whole grain wild rice or Quinoa
Arugala Salad
Desert: Probably skip it. But if I was serving it would be Baked Apples
If you are Vegetarian or Vegan you can substitute the turkey for Tempeh or Seiten, and add black beans to the rice or quinoa.

DELICIOUS SNOW PEAS WITH ORANGE


In my child hood days my granny use to cook snow peas with mustard sauce. But snow peas was not my child hood favorite. I very cleverly avoid this vegetable but as I grew up and my interest for healthy food increase, I found this snow peas quiet interesting. Snow peas in mustard sauce is very delicious but I try out little differently and like the taste. Now you tell me whether you like this snow peas recipe or not?

INGREDIENTS:

Snow Peas 4 cups
Red bell pepper 1 sliced
Canola oil 3 tsp
Garlic 1½ tsp finely chopped
Orange 1(only zest freshly grated )
Orange juice 6 tbsp
Salt and pepper according to taste


PROCEDURE:

Choose pods that are bright green, smooth and look juicy. Avoid any that are wrinkled or yellowing. The peas should be very small, and almost completely flat. You might find a few withered petals still clinging to the stem, which also give a clue as to freshness. Use a small, sharp knife to trim off the tops and tails.
Now take a pan and heat oil, keep it in a medium flame. Add garlic and then orange zest stir for few second . Add snow peas and red bell pepper slices stir then add orange juice. Stir for a second . Cover and cook until the snow peas get tender about 4 to 5 minutes. Uncover and cook for another minute until the gravy thickens a little bit. Adjust seasoning with salt and freshly ground pepper. Your delicious snow peas with orange is ready to serve with bread. Have it in lunch or dinner and I hope your kids will also love this orangey veggie dish.

DELICIOUS LAMB STEW RECIPE


After a busy week if you are avoiding those loud weekend parties and want to spend some lazy moment with yourself and not in a mood for elaborate cooking then this delicious lamb stew is just for you.

INGREDIENTS:

Big chunks of lamb 4 to 5
Star anis 1
Garlic 2 cloves
Clove 4 to 5
Cinnamon 2 pieces
Cardamom 3 to 4
Ginger pieces 1 inch
Flavored tea leaves 6 to 7
Potato skinned and cut into big pieces
Green Papaya skinned,deseeded and cut into big pieces
Cauliflower 5 to 6 big florets
Onion sliced
Butter/diet butter 1 ½ tbsp
Milk 1 cup
Water 3 to 4 cups
Sugar/
sugar substitute 1 tsp
Salt and pepper according to taste


PROCEDURE:

First boil the lamb chunks with two cloves of garlic and star anis. Then crush clove,cinnamon and cardamom and ginger with it add the flavored tea leaves. Take a piece of muslin cloth then keep this spices in it and tie it up like a small bag if you have reusable muslin tea bag then you can fill the spices in it and then use it. Then put a pan on flame put 1tbsp of butter let it melt now add the potato, cauliflower and papaya. Stir for 1 to 1 ½ minutes. Then add the boiled mutton pieces and sliced onion. Stir and then add 4 cups of water,that special spice filled muslin bag and salt. Let it boil cover the lid and cook for 10 to 15 minutes until the vegetable become tender and the lamb pieces more soft.Then take out the muslin bag by the time it had already add wonderful flavor to this stew.Add sugar and milk cook for half a minute and then put off the flame. Add ½ tbsp of butter and sprinkle black pepper .
Your delicious lamb stew is ready. This stew is not only tasty but also healthy as this stew have papaya which contains ‘papain’, a digestive enzyme known for aiding digestion, it is also a rich source of fiber, papaya consumption helps in lowering high cholesterol levels. Serve hot this lamb stew with bread croutons or some garlic bread. I hope as this stew look divine it will also taste the same.

You take a medium sized onion at room temp.

I like the juice fresh…

And if the room is chilly warm
it in the microwave for 5 sec

Cut it in half take a fork and
prick the onion until juice forms

then squeeze the onion, like a
lemon directly into the ear.

Within days the ear ache was gone!

I use this home remedy for my
22 yr old son when he was just 5 years old.

And now 5 grandchildren

DELICIOUS CREAMY PRAWN


My Big Brother celebrated his Birthday 6th of November. So now you know that I have lot of fun this weekend . In today’s busy life, we hardly get time to share with friends and family but such days of the year is like a reunion day for the whole family. We arrange very casual close party where we enjoy good food, good music,chat and share lots of fun. Few of our cousin stay back for the weekend. Yes after a long time we enjoyed a lot. As I told you earlier that my Mom is a wonderful cook and for this special day she prepared some awesome dishes. One of which is this creamy prawn I am sharing with you today. Creamy prawn is very easy to make and about the taste- let you decide when you write back to me.

INGREDIENTS:

Prawn 10 to 12(peeled, , deveined)
Butter /diet butter 2tbsp
Chopped garlic 1tbsp
Mustard powder 1tsp
Red chilly powder 1/2 tsp(or according to taste)
Mayonnaise 4 tbsp
Fresh Cream 2 tbsp (optional)
Chopped parsley 2tbsp
Lemon juice 2tsp
Salt according to taste


PROCEDURE:

First of all take prawn peel devein and wash the prawn well. In a bowl take the prawn and marinate it with salt and pepper, keep aside for 10 minutes. Now take a frying pan melt butter add chopped garlic sit for one minutes add the prawn stir for one minute Then add mayonnaise , cream, mustard powder and chilly powder. Stir for another one minutes. Then give the chopped parsley mix well. Adjust seasoning put off the flame and your eye catching delicious creamy prawn dish is ready for your friends and family.
Add this creamy prawn in your delicious seafood recipes list.

STUFFED CUCUMBER


I hope you all have enjoyed a lovely weekend . Lots of fun and happy moments that time will treasure for many years to come. In such festive season, I always think that we can never get such happiness just by asking, but some times such special blessed moment enter our life without knocking and fill our so called daily regular life with immense happiness and love.

Today I am not in a mood for cooking I thought why not go for a bit raw diet . So I prepared stuffed cucumber for breakfast . This is very simple and easy to make. So if you are tired after all those weekend parties you can try out this stuffed cucumber.

INGREDIENTS:

Cucumber 3
Boiled peas ½ cup
Grated carrot ½ cup
Balanced beans ½ cup
Boiled Chicken cube ½ cup
Mayonnaise 1 cup
Salt and pepper according to taste
Grated cheese 3 tbsp ( optional)
Chopped parsley for garnish


PROCEDURE:

Peel the cucumbers, you can cut in half lengthwise or half way and then carefully remove the seeds with spoon, leaving the bottom intact. Now in a bowl mix all the above ingredients except cheese and parsley. Now fill the mixture with a spoon into cucumber rounds that are halfway hollowed out. Top with cheese and minced parsley. Srve in long basil leaves. Those who trying to loose some pounds or want this recipe to be more heart healthy, avoid cheese topping for stuffed cucumber. You can also lessen the quantity of mayonnaise. Make this stuffed cucumber more healthy . Have a Good Day!

SPICY HALLOWEEN PUMPKIN


WISH YOU ALL A VERY HAPPY HALLWOEEN.

You must have tried a number of various pumpkin recipe for Halloween. Add one more to your list I think this will be little unique in taste from all that you have tasted so far. Give it a try and let me know you like it or not.


INGREDIENT:

Chopped onion 2
Bell pepper 2 deseeded and chopped
Pumpkin 750 grams cut into small pieces
Turmeric powder 1 tsp
Dried red chilly 1 whole
Black mustard seed 1tsp
Garlic 2 clove minced
Ginger 1tsp grated
Peanut fried handful
Coconut grated 4 tbsp
Cilantro 2 tbsp for garnish
Vegetable oil 4 tbsp
Lemon juice 1tbsp
Salt according to taste
(Optional)
Green chilly 1 chopped
Shrimps 10 to 12 ( slightly fried )


PROCEDURE:

In a frying pan with vegetable oil, heat the mustard seeds until they begin to pop, with it break the whole dried red chilly in two pieces and add. Add chopped onion and fry till transparent add minced garlic, bell pepper and grated ginger stir for a minute, add pumpkin, turmeric powder and salt. Sauté for 3 to 4 minutes. Cover and allow the pumpkin to cook . When the pumpkin is well cooked add the fried peanut(those who are strict weightwatcher they can use roasted), sugar, grated coconut and if you want to make it more yummy the you can add slightly fried shrimps and green chilly. Stir it for another one minute. Remove from flame add lemon juice and chopped cliantro. Serve with steamed rice or breads. I think your guest will definitely remember this Spicy Halloween Pumpkin for many years to come and don’t forget to share your Halloween stories with me I am waiting………

YUMMY STIR FRIED VEGETABLE


I think like me everyone of you have noticed that today we are simply fighting with time. With so much modern technologies provided to save time yet we always run short of it, I wish if God could give a few more hours a day at least 26 hrs, then we could get some time to sleep or chat a bit more. I think this is one wish which can never be fulfilled but in busy days with tight work schedule what about cooking some thing really fast and easy yet delicious. Today I cooked a very simple stir fried vegetable which is healthy, delicious and fast to cook. So I am sharing that with you. Cook it and have it or pack it in your lunch box and you are on.

INGREDIENT:

Assorted vegetables
( florets of cauliflower, broccoli,
fresh green peas, beet root,
potato, carrot) 1 bowl
Red bell pepper 1 sliced
Chopped onion 1
Chopped green chilly 1
Cumin seed ½ tsp
Raisin 10
Honey 1tbsp
Lemon juice 1 tbsp
Chopped cilantro 2 tbsp
Oil 2 tbsp
Salt and pepper according to taste


PROCEDURE:
First of all blanched all the veggies, let them remain bit crispy. Heat oil in a pan. Add the cumin. When it splutters add onion stir when onion become transparent add bell pepper fry a little bit then add all other vegetable stir then add salt ,pepper and green chilly. Stir and then cover it with lid for a minute just to make the veggies a little more soft. Stir to avoid sticking. Then add raisins,honey, and lemon juice remove from flame and then add chopped cilantro . Your yummy stir fried vegetable is ready . Have it with bread. I hope you will love this simple yet easy to cook recipe.

DELICIOUS LAMB MOUSSAKA



I spend a very lovely evening day before because a friend of mine just returned from her Greek honeymoon. Have you ever visited Santorini ? I have not yet but seeing the photographs and video, I must say I am visualizing myself under the blue, blue skies and bluer yet Aegean sea , white washed houses cascading down the cliffside….. sitting on my special Greek island balcony………a glass of chilled blue curacaos , a little feta cheese with few roasted almonds and pistachio nuts and that’s when the moonrise in Santorini from blue Aegean sea. My heart will surely stop at the joy of being in the most beautiful place with that special person of love. Sounds too romantic ! Plan a vacation this weekend I am sure you will have a experience to treasure for life . My hangover is not over yet so today I cooked delicious lamb moussaka just to pamper my thought a bit more. I know you have tasted many types of moussaka but this one is simple and I try to follow the authentic Greek style as far as possible. So while you plan a romantic vacation taste this delicious moussaka it will surely help you to materialize your plan fast.




INGREDIENTS:

Minced lamb 750grms
Eggplant 2 large
Onion 3 (finely chopped)
Garlic 3 cloves (paste)
Flour 50grms
Tomato puree 50grm
Olive oil 25ml
Lamb stock 300ml
Butter/ Diet butter 50grm
Milk 500ml
Grated cheese 150grm
Oregano 1 tsp
Red wine 300ml
Salt and pepper according to taste
Grated nutmeg 1 pinch
Chopped parsley for garnishing


PROCEDURE:
For Eggplant-Wash the eggplants and trim off stems. Cut off 1/2-inch wide strips of the skin lengthwise, leaving about an inch in between, all around the eggplant, then cut the eggplant lengthwise into 1/2-inch slices. Put the slices in a large bowl or on a tray, sprinkle liberally with salt and let them sit for 30 minutes. Rinse well, drain, and pat dry. In a grill tray place the eggplant then brush with olive oil and grill both side till lightly brown and soft. Remove and let it cool.

Meat Sauce-Preheat the frying pan or skillet over low heat. When the pan is hot add 2 tbsp of olive oil. Heat the oil in slow flame add chopped onion and garlic paste . Sauté it. Then add the minced or grounded lamb stir it. Add tomato puree, red wine, oregano, salt and pepper and the stock then stir the whole thing well. Reduce heat, cover and simmer until all liquid has been absorbed , about 45 minutes to an hour. If there is still liquid in the pan continue to simmer uncovered until the mixture is as dry as possible, stirring to prevent sticking. Put off the flame and set aside uncovered .
Béchamel Sauce - In a saucepan, melt the butter on low heat. As soon as it melts, add the flour and stir with a wooden spoon until there are no lumps, and increase the heat to medium-low. Add the milk slowly, stirring constantly with a whisk, and continue stirring until the sauce begins to thicken - creamy without being too thick. Remove from the heat and stir in salt, pepper, and nutmeg. Stir in the egg yolks and return to the heat, whisking briskly until well blended. Remove from the heat, stir in the cheese, mix well and set aside, covered, until ready to use.
Lightly oil the baking dish. Place a layer of half of meat and then a layer of eggplant then again a layer of meat mixture and then again a layer of eggplant. Spread the béchamel sauce evenly over the top and then in a preheated oven bake it for 30 to 40 minutes until golden brown. Garnish with chopped parsley. Remove the moussaka from the oven and allow to cool for 20-30 minutes. Moussaka is traditionally eaten warm, not hot, and can also be eaten at room temperature. This recipe is bit elaborate but in weekends such little effort for our dear ones is worth, what do you say?

This recipe can be doubled for volume.

DELICIOUS APPLE DESSERT


I know my friends as I missed you so do you but my home for last few days was packed with friends and relatives so I don’t get enough time to update my blogs but now I am on my job again. Last week I cooked lots of foods for all my loved ones but something that the little kiddos love and even their Moms and Dads was a delicious yummy apple dessert.
Before going to main recipe take a quick look why it is said -"An apple a day keeps the doctor away". I get to know that recent studies have suggested that the consumption of apples can help control weight gain, lower risk of heart disease. Though most people find flesh part of apple more delicious but skin is definitely most nutritious. The apple skin is considered roughage and is a great remedy for constipation. One of the soluble fibers found in apples is called pectin. Pectin reduces the amount of cholesterol produced in liver, slows digestion and the rise of blood sugar making it ideal for diabetes patient. But always try to select good variety of apples like Granny Smith. As I am sure I think so do you that you are having a healthy dessert. Now back to the main recipe.

INGREDIENTS:

Apple puree 3 cups
Butter/ Diet butter 1 tbsp
Sugar / Diet sugar ½ cup or according to taste
Saffron strands few
Rose water 7 to 8 drops
Chopped dry fruits ½ cup
( almonds, pistachio,
cashew, raisins)
Nutmeg powder 1 pinch
cardamom powder 2 pinch


PROCEDURE:

Place a pan and the give butter in it as the butter melts add apple puree. Stir for some time then add sugar in it . Stir for few minutes .Soak saffron in 2 tbsp of warm water. Add this into the mixture stir continuously. Add dry fruits, rose water and go on stirring for a minute and then put off the flame. Your yummy apple dessert is ready . Let it cool down and then garnish it with some cashew and raisin and serve.
