DELICIOUS CHICKEN NUGGETS WITH SALSA DIP


Chicken nuggets are one of my favorite snacks but have to cut it short as the fried version is loaded with oil. But a friend of mine e-mailed me this delicious chicken nuggets recipe and spicy salsa dip, it is just awesome. This can be a good choice for those who want a bit healthy version of chicken nuggets and those weight watchers as we are skipping the fried part. So this recipe is for all specially those who can’t join the weekend salsa dance party, enjoy this chicken nugget with salsa dip. This is as hot and tempting! Hahaha!
INGREDIENTS FOR NUGGETS:
Chicken paste   1 ½ cup
Grated cheese 1/3 cup
Oregano 1tea spoon
Egg 1
Flour as required
Bread crumb as required
Salt according to taste

Ingredients For Salsa Dip
Tomato ketchup ½ cup
Chilly vinegar 2 teaspoon
Red chilly powder 1/2 teaspoon
Green bell pepper 1
Vegetable oil ½ tablespoon
Salt and sugar according to taste

PROCEDURE:
To make the chicken nuggets take a bowl place the chicken paste (add salt while making the paste), add oregano, and grated cheese. Mix well. Whisk egg on another bowl. Now take a portion of the chicken mixture give flat ball shape or any shape you want then coat it with flour and dip in beaten egg then roll it in bread crumbs. Place these chicken nuggets in a greased nonstick microwave pan. Preheat the oven at 230 degree F and then cook this nuggets for 15 to 20 minutes or until done.
Now to prepare the salsa dip first pierce the green bell pepper with a fork and hold over flame until skin blackens. Then remove from heat rub off the burnt skin and chop. Add this chopped bell pepper with tomato ketchup, red chilly powder, vinegar, oil, salt and sugar in your mixer and mix well. Your salsa dip is ready to serve.

DELICIOUS SPINACH WITH ROASTED PEANUTS


Hello friends hope you all have spend a great and happening weekend, me too. This weekend I spent some good moments listening to romantic numbers of Giovanni Marradi and my weekend hangover is not over yet. Today to keep that sweet relaxed mood alive I cook a very simple, quick to make yet very delicious spinach with roasted peanut.Cherish this simple recipe. I hope you will like it.
INGREDIENTS:
Spinach leaves             1 big bowl ( torn into bite size pieces)
Unsalted roasted peanuts ¼ cup
Garlic 1 clove pressed
Grated ginger ½ tea spoon
Chilly flakes ¼ tea spoon (optional)
Peanut oil 1 table spoon
Sugar ¼ tea spoon (optional)
Salt and black pepper according to taste
PROCEDURE:
Blanch the spinach leaves. Strain the excess water and keep aside. Now take a skillet heat peanut oil. Add garlic and red chili flakes( if using). Then add the blanched spinach. Stir well. Add grated ginger, sugar (if using), salt, and black pepper. Finally add the roasted peanut. Stir for 1 to 2 minutes. Your delicious spinach with roasted peanut is ready to serve with your favorite bread rolls. I love to have it with soft Italian breads, it is simply delicious!

DELICIOUS DUMPLING WITH HOT DIPPING SAUCE


I want to say I am so sorry that I missed the day 14th to wish all my friends who are celebrating Chinese New Year. Any way A Very Happy Chinese New Year to you all. May God bless you and all your loved one’s health , wealth, love and happiness. Few days back I prepared Chinese dumpling for my weekend evening party and everyone enjoyed it a lot and a friend of mine told though dumpling is all time favorite Chinese food but it is one of the traditional festive food served during the time of New year. I think it’s easy to make, healthy and if you doubled the ingredients you can serve to masses. It’s a fun making dumplings with all its twist and turns and the best part is you can cook dumplings immediately or cover it in a plastic wrap and refrigerate for several hours. So today I want to share with you my type of Chinese dumpling recipe.
INGREDIENTS:

Shrimp peeled and cleansed   ½ cup
Crab meat uncooked ½ cup
Finely chopped cabbage 3 cups
Finely chopped carrots ½ cup
Soya sauce 2 teaspoon
Scallions ¼ cup finely minced
Onion 1 finely chopped
Green chilly 1 finely chopped (optional)
Sesame oil 1 teaspoon
Salt and white pepper according to taste
Dumpling wrappers or
wanton wrappers 30 to 32
* Some warm water in a bowl to seal the dumplings
For Dipping Sauce
Soya sauce 2 table spoon
Crushed garlic 2 cloves
Chinese rice vinegar
(dry sherry) 1 tablespoon
Sesame oil 2 teaspoon
Chilly sauce ½ teaspoon (optional)
Chilly flakes ¼ tea spoon
Sugar 1 or ½ tea spoon (according to choice)

PROCEDURE:
First take finely chopped cabbage in a large bowl and sprinkle with salt. Let cabbage sit for 10 to 12minutes. Then take shrimp, crab meat minced them then mix them with soya sauce, scallions, onions, ginger, green chilly, carrots, sesame oil, salt and pepper. Mix well. Now strain the excess moisture of the cabbage and place the dry cabbage back into the shrimp mixture. Fold the cabbage into the shrimp mixture. Now take one dumpling wrapper, spoon the mixture onto the middle of wrapper. Dip one finger into warm water on the wrapper ends to moisten, and fold the wrapper in half, pinching it together to enclose the filling. Repeat the same process with the remaining dumplings. Steam the dumpling for 10 to 15 minutes, I use steam cooker for this .Serve hot with the dipping sauce for which you only have to mix all the ingredients listed under sauce. Your delicious dumplings are ready to have as snacks or breakfast or anytime as you wish.

VALENTINE’S SPECIAL CHOCOLATE SOUFFLE


February is said to be the month of romance. Expressing love, care and affection is what Valentine’s Day is all about. This is the day when our heart want to shower all things expensive for that special someone but now when times are lean and our wallet don’t permit us to spend too much what can we do to make that special person feel that they are our world ? Yes we can win our way to that special one’s heart with a romantic meal at home. This is an affordable and delicious way to make him /her feel special this Valentine’s Day. Today I am sharing with you a romantic chocolate soufflé recipe which I try to make as healthy as possible so that it don’t add inches to your waistline. I think chocolate soufflé recipe is an ultimate chocolate dessert which no one could say no in this romantic festival of Valentine’s Day.
Soufflé though seems a bit tough and restaurant- only dessert but I am sure with a little love for your beloved and the easy procedure that I share, this will be worth trying.

INGREDIENTS:

Granulated sugar 3 ½ table spoon
Egg white 3 large
Egg yolk 1 large
Bitter sweet chocolate 2 ½ ounce (chopped)
Heavy cream 1 table spoon
All purpose flour 1 teaspoon
Vanilla essence ¼ teaspoon
Or
Cinnamon powder 1/8 tea spoon
Salt 1/8 tea spoon
Butter 1tea spoon (optional)
Powdered sugar for dusting (optional)
Strawberry few pieces ( for garnish)

PROCEDERE:

Preheat the oven to 375°F. Lightly coat two ramekins with butter or cooking spray then coat inside of each with 1 ½ teaspoon of sugar and pour out the excess. To melt the chocolate you can use microwave or double boiler. If you are using microwave then place the chocolate in a small bowl and microwave in medium stirring every 20 seconds. It will take 1 to 2 minutes for the chocolate to melt. Otherwise place the chopped chocolate on top of a double boiler, stir gently when it is almost done remove from heat and stir until the whole things get melted. Now take another bowl whisk egg yolk and cream until combined. Then whisk in the chocolate until smooth, and then add flour and cinnamon powder or vanilla essence as per your choice and whisk until everything is well blended. Now in a medium bowl beat egg white and salt until soft peaks form, beat the remaining sugar slowly until it forms a glossy, stiff peak.
Now with a rubber spatula gently folds half of the egg white mixture to the chocolate mixture. Then with soft hands fold the rest of egg white mixture to the chocolate mixture until no white streaks remain. Now with a large spoon place the soufflé mixture in the prepared ramekins. Fill up to ¼ inch below the rim. Place on a baking sheets bake until its firm on top and puffed up at least an inch above the rim. Dust with powder sugar and garnish with pieces of strawberry.
Serve immediately. Like romance soufflé is best when served hot. So light up some scented candles and enjoy this romantic chocolate soufflé . I hope it will rock .

HOT BORSCHT FOR VALENTINE’S DAY

Today let me tell you a story about a friend of mine who use to forget Valentine’s Day every year and his beautiful wife have to find out unique creative ways just to make him remember that a special day is coming, after all who in the world would like to miss yummy choclates, bunch of flowers and those special diamond studded jewellary . Ha haha! Last year she done a lovely thing, as soon as the second week of February starts she start cooking pink and red dishes . First day that friend of mine don’t get the point but after two days he suddenly realize that every food is going red and pink. Ultimately he can solve the puzzle of red foods. So last Valentine’s Day my friends wife not only get loads of gifts but some unforgettable moments of happiness packed with love . I hope now you get an idea how to say your beloved Valentine’s Day is coming without using a single word. If you are thinking which red color dish you can prepare then let me give you this yummy delicious hot borsht recipe, ideal for Valentine’s Day.
INGREDIENTS:
Vegetable stock      6 cups
Beet root 2 (shred coarsely)
Carrots 1(finely chopped)
Celery 2 stalks( chopped)
Parsnip 1
Fresh or canned
tomatoes pulp 1 cup (chopped)
Boiled potatoes 1
Garlic 1 cloves
Onion 2 chopped
Cabbage 2 cup finely shredded
Green bell pepper 1 (chopped)
Butter/diet butter 2 table spoon
Sour Cream ½ cup
Fresh or
dried dill leaves 1 tea spoon
Sugar 1 tea spoon (optional)
Salt and pepper according to taste

PROCEDURE:
Boil stock in a stock pot and then add the beetroot , carrot, garlic ,celery and parsnip. Bring to boil then simmer and cover for 10 to 15 minutes . In the meantime take another skillet add 1 tablespoon of butter add chopped onion sauté until tender add tomatoes pulp bring the flame from medium to slow cook for 10 minutes. Add salt and pepper. Add shredded cabbage in it stir and cook until it is a bit soft . In another bowl mashed potato with butter and half of cream . Increase heat to a boil, stir in sautéed cabbage, bell pepper, mashed potatoes to the stock pot. Reduce heat and simmer for few minutes adjust seasoning. Top with fresh dill leaves and sour cream. Serve hot. I hope this delicious soup will touch your beloved heart and you enjoy one of your most memorable Valentine’s Day.

DELICIOUS BANANA TREAT


I am sure all my friends have missed me because all of a sudden I missed this week regular post. I am busy in a delightful family event, my cousin sister get married. So my big family is celebrating this auspicious event for last three four days. It was a wonderful fun filled family occasion, firstly because our sweet little sister entered into a new phase of life with his longtime beloved and secondly because all our family members are together, which is rare in our daily busy life. Blessings, love and happiness merged with fun, music and good food. A pure celebration of joy! Today I want to share with you a delicious banana treat which is my sister favorite and was specially prepared for the newlywed bride groom .It was simply delicious! All you who avoid the cream scoop to weight watch this is can be your favorite too. Give it a try.
INGREDIENTS:

Egg white        1
Banana 1 large, mashed
Lemon juice 1tea spoon
Honey 1table spoon
Salt 1 small pinch
Lemon rind ½ tea spoon, grated
Almond 1 tea spoon, chopped
Fresh fruits 2 cups ( peaches, straw berry,
blue berry or other)
PROCEDURE:
In small bowl, beat the egg white until foamy. Add the mashed banana, lemon juice, honey, lemon rind, pinch of salt. Beat until mixture forms stiff peaks. Spoon the mixed fresh fruits into individual dish of your choice and top with this delicious banana cream, then garnish with some chopped almond. Your delicious banana treat is ready to relish.
