GINGER MINT SUPER COOLER



Summer is one blessed time when we get to sip some of the yummiest cool drink of this world. Even some simple drink recipe is so refreshing that it rejuvenates us in special way.
The other day due to some work I visited a friend house and her maid prepared this simple ginger mint drink for us. Believe me in a hot afternoon it is an unbelievable satisfying thirst quencher . Give this simple ginger mint super cooler a try, I hope you will love it.
INGREDIENTS:
Ginger       1 inch sliced
Mint leaves handful
Lemon juice 1 table spoon ( for each glass)
Lemon wedge 1 for each glass
Black salt 2 pinch
Sugar according to choice (optional)

PROCEDURE:

Take ginger and mint into blender and crush them well. Now strain the juices and don’t throw away the strained ginger mint paste. Mix the ginger mint juice( use 1 to 1 ½ table spoon full juice for one glass) with lemon juice , black salt sugar and cold water. Put some crushed ice if you want in the serving glass and pour this mixture. Now add a pinch of the strained ginger mint paste it add special romance to this glass. Now garnish with lemon wedge and fresh sprigs of mint leaves. Your ginger mint super cooler is ready to sip.

SIMPLE SUMMERY TOMATO SALAD


Its summer, its hot and we all want something fresh yet easy and tasty dishes . Now this tomato salald is of such type. A zip zap zoop recipe! I am sure you will love this simple summery tomato salad.
INGREDIENTS:

Farm ripe tomotoes  4 large sliced
Onion 1 medium size sliced
Lime juice 1 1/2 tablespoon
Extra virgin olive oil 2 table spoon
Fennel seed 1/8 teaspoon
Dried red chilly 1
Groung cumin 1/4 teaspoon
Cliantro handfull chopped
Sugar 1/4 teaspoon(optional)
Salt and
freshly ground
black pepper according to taste

PROCEDURE:

Arrange the sliced tomato and onion on a serving platter and sprinkle sugar and lime juice. Now place a pan on medium heat. Add oil and let it warm add cumin, fennel and red chilly (just broke it a little bit while giving it to hot oil otherwise it may suddenly crack and splutter and make it an aurally and visually challenging environment.) Heat the oil with all the spices for 20 second ,until fragnant. Remove from oil let it cool. Now discard the red chilly . Drizzel this spicy oil over the tomato and onion slices. Sprinkle chopped coriander and season with salt and pepper. A very tangy and yummy tomato salald is ready to serve .

DELICIOUS STRAWBERRY BANANA SMOOTHIE


We all know how fruits help to rebuilt our body. A healthy strawberry banana smoothie is one of the most delicious and nutritious summer drink you have ever tasted. This healthy fruit smoothie is loaded with vitamins, minerals, phytonutrients and enzymes that you have in whole food . Banana is rich in potassium and strawberry rich in vitamin C. Healthy fruit smoothies helps to retain the fiber from fruits which help to improve in digestion and act as a good antioxidant. This healthy delicious strawberry banana smoothie is great for summer. So have it , love it and feel satisfied.
INGREDIENTS:


Strawberry    1 cup sliced
Ripe banana 1 sliced
Strawberry yoghurt 3/4 cup
Ice cubes 1 cup
Salt one small pinch
Sugar according to choice (optional)
Cream 1 table spoon for each glass (optional)


PROCEDURE:
Take strawberries, banana, salt, sugar, ice cube in a blender. Process all the ingredients until smooth. If its too thick then you can add little water or milk. Blend well and your delicious strawberry banana smoothie is ready to sip. If you want your strawberry banana smoothie to be extra smooth mix a table spoon of cream in each glass. Garnish with strawberry slices.Your super yummy delicious smoothie is ready to serve.

DELICIOUS MINT DIP


Cooking in summer is a test of culinary skill for us living in this part of the world where temperature raise every now and then.For that in such hot days I have to look for something that will give me a cool and fresh feeling from within. So I tried out this delicious mint dip a day before when temperature rise up to 41 degree.This mint dip  is healthy and give me a refreshed feeling in this hotty summer days.

INGREDIENTS:


Fresh mint leaves    1 small bunch
Hung yoghurt or
Greek yoghurt 2 cups
Raisins 1/3 cups
Roasted cumin seeds 1 teaspoon
Red chilly powder and
Salt according to taste
PROCEDURE:
Grind mint, cumin seeds and raisins into a fine paste. Mix into the curds with salt and chilly powder. Mix well. Serve chilled.I have it with some fruits and vegetable salad and a piece of bread. You can enjoy this delicious mint dip with your bread rolls or chicken lollipops or whatever way you like it have it . It’s all yours.

PENNE WITH PESTO SAUCE:


A friend of mine invited me for lunch so I want to cook something fresh delicious yet light for breakfast. I open my refrigerator; saw some fresh basil leaves and this fresh green leaves motivate me to prepare delicious penne with pesto sauce. I hope you will like this simple yet yummy recipe.

INGREDIENTS:



Penne             2 cups
Fresh basil 1 cup chopped
Walnut ½ cup
Garlic 5 to 6 cloves
Parmesan cheese ½ cup grated
Olive oil 1/2 cup
Salt and pepper according to taste
PROCEDURE:
First prepare the pesto sauce. Take basil, walnut, garlic, salt and pepper in your food processor.. Slowly add the olive oil while the machine is running. When it come to a consistency of mayonnaise that means now you have to stop adding oil. Mix a little bit of cheese. Make a smooth paste. Cook the penne adding salt and olive oil. Now drain the excess water. Pour the pasta in a serving bowl. Cover evenly with pesto sauce and grated cheese. Mix well. Garnish with basil leaves. Your delicious penne with pesto sauce is ready. This is a healthy breakfast because we use walnut, rich in omega-3 fat, alpha-linolenic acid(ALA) which is good for heart. For the weight watcher you can skip cheese or use a little bit of it and enjoy this penne with pesto sauce.

DELICIOUS SWEET CORN SOUP


This week some beautiful lines inspired me to cook this wonderful delicious sweet corn soup. A friend of mine e-mailed me this lines- Soup is a lot like a family. Each ingredient enhances the others; each batch has its own characteristics; and it needs time to simmer to reach full flavor. -Marge Kennedy . It is so true I wish and hope everyone of us understand this, then life will became more healthy and prosperous in every sense.I hope this sweet corn soup remind you the above lines whenever you have it.
INGREDIENTS:
Chicken stock       3 cups
Cream style corn 1 tin
Milk 1 cup
Corn starch 1 table spoon
Boiled chicken cube 1 cup
Egg 2
Salt and white pepper according to taste

PROCEDURE:
In a saucepan pour chicken stock, corn and salt and pepper. Place it on flame and mix well. Let it boil for 5 minutes. Now add milk let it boil then mix cornstarch with little water and add it to the soup. Mix well. Then add chicken cubes. Beat eggs on a different bowl and pour beaten eggs slowly through a sieve. Stir well. Adjust seasoning. Your delicious sweet corn soup is ready to serve.
This is a feel good soup I hope you will like it!

DELICIOUS PEACH MELBA


Peach melba a great summery dessert . A friend of mine prepared this delicious peach melba in her Easter Sunday dinner party last year. From then onward she prepared it number of times on our request of course. So I thought that today is the right day to share this lovely mouthwatering dessert with you all. Peach melba invented in 1892 by a French chef Auguste Escoffier at the Savoy Hotel, this dessert once invented to honor Nellie Melba one of the most famous Australian singers still have its delicious effect. My family drool at its taste whenever I make it.
INGREDIENTS:
Ripe peaches 
dipped in peach syrup 1 halved
Raspberries sauce 20 gram
Vanilla ice cream 2 scoop
Whipped cream 20 gram
Roasted almond 5 gram sliced
Wafer biscuit 1
Fresh mint leaves 2
PROCEDURE:
Take a serving plate arrange the halved peaches on one side and spread the raspberries sauce on it. Now place two scoop of vanilla icecream in front of it. Above it spread whipped cream then sprinkle roasted almond. Place wafer biscuit on one side and garnish with mint leaves. You can make this whole arrangement on a icecream glasses also. Presentation is upto you but I bet you will love the taste.

SEVEN LAYER SALAD


I was introduced with seven layer salad few years back. I served it in many of my summer time dinner parties and every time it gets lot of appreciation from the guests, it looks beautiful and taste great. As Easter is knocking the door you can keep this cool salad in your list. I think every guest will love this eye catching salad.

INGREDIENTS:





Lettuce     1 large chopped
Baby spinach leaves 10 to 12
Baby tomatoes 10 to 12 halved
Egg 6 hard cooked sliced
Mustard powder 1/ 2 tea spoon
Red and green onion 1/2 cup each chopped
Green sweet pepper 1 cup chopped
Green peas 2 cups thawed
Carrots 1/2 cup juliennes
Bacon 1 1/2 cup cooked & crispy
Mayonnaise 1 cup
Low fat cheddar cheese 1/2 cup shredded
Sugar 1 table spoon or to taste
Salt and pepper according to taste
PROCEDURE:
Take a big clear salad bowl. Make a base of green with lettuce and baby spinach. Now above it make layer of tomatoes. Then a layer of sliced egg sprinkle mustard powder. Then a layer of red onion and green onion. Then a layer of green pepper , carrots and then green peas and crispy bacon. Sprinkle salt and pepper in every layer. Mix sugar and mayonnaise. Top the salad with the mayonnaise . Garnish with spring onion. Wrap the bowl tightly with plastic wrap, chill for 5 to 24 hours. Serve with grated cheese and toss gently while you serve.
You can serve this seven layered salad in trifle dish so that your guest can enjoy all the colors of this delicious salad.

*For the weight watcher skip the cheese part and use diet mayonnaise. Yes I know that taste will vary but health should be your first priority.

Good Afternoon,

I am often asked what are my thoughts on Vitamin D. There certainly has been a lot published recently about the subject and many healthcare professionals are saying that we all don't have enough of it. So far I am listening....I do know this more and more folks are not getting adequate sunshine and fresh air and I also know that you must address the basics first. In other words if your digestion is not functioning you will not adequately absorb any of nutrients you take into the body, whether that is a supplement or a food. Vitamin D

Vitamin D is produced in the body when the UV radiation in sunlight strikes the skin, triggering its synthesis. It is metabolized into the active form of the vitamin (1,25-dihydroxyvitamin D) in a two-step process that occurs first in the liver and finally in the kidneys.

What is vitamin D?

Early in the 20th century scientists discovered that rickets, a childhood disease characterized by improper bone development, could be prevented by a compound isolated from cod liver oil referred to as "fat-soluble factor D," now known as vitamin D. The vitamin was also called "calciferol," since it was found to boost calcium deposits in bone. Because vitamin D is so important in skeletal growth and strong bones, many foods are fortified with this vitamin to ensure that children obtain adequate amounts.

There are two basic types of vitamin D. Ergosterol is the basic building block of vitamin D in plants. Cholesterol is the basic building block of vitamin D in humans. In the past, these two forms of vitamin D (calcitriol originating in animals, and ercalcitriol originating in plants)

What is the function of vitamin D?

Maintaining proper calcium levels in the blood

Although typically categorized as a fat-soluble vitamin, vitamin D actually functions more like a hormone. Calcitriol, the most metabolically active form of vitamin D, works with parathyroid hormone (PTH) to maintain proper levels of calcium in the blood.

Maintaining proper phosphorus levels in the blood

When vitamin D levels remain problematically low, the parathyroid gland becomes overactive, a condition known as hyperparathyroidism. PTH levels rise, and blood levels of phosphorus drop. Without adequate phosphorus, bone cannot be properly mineralized, which contributes to the defects seen in osteomalacia.

Maintaining healthy immune function and preventing excessive inflammation

Vitamin D also helps regulate immune system activity, preventing an excessive or prolonged inflammatory response. Our immune cells, specifically our active T-cells, have receptors for vitamin D. This is important because autoimmune diseases-including multiple sclerosis, diabetes, rheumatoid arthritis, irritable bowel diseases (such as Crohn's and ulcerative colitis-all have a T-cell component of inflammation.

Foods Rich In Vitamin D

WILD Sockeye salmon is an exceptionally rich source of vitamin D: a 4-ounce serving of baked or broiled sockeye salmon provides 739.37 IU of vitamin D. The same 4-ounce serving of Chinook salmon, another excellent source of vitamin D, supplies 411 IU.

Why are sockeye salmon even more richly endowed with vitamin D than other salmon species? Because zooplankton constitute so much of there diet, and zooplankton-along with phytoplankton-are the key sources of vitamin D in the marine food chain

Also rich in Vitamin D are Sardines, Cod, Eggs and Milk.

Always choose organic sources and check with your health care professional if you are lactose intolerant.

Vitamin D supplementation

Please be clear however that you have to start with the basics. That means that if you take any food or supplementation into your body your digestion needs to be functioning well in order to absorb the available nutrients. Second, in the case of Vitamin D, the Liver and Kidneys play a vital role in the conversion of Vitamin D into it’s useable form. So these organs also need to be functioning well. Vitamin D also requires co-factors to function and the most important of these is Magnesium. Please talk to your healthcare professional before you begin supplementing with Vitamin D.

What are deficiency symptoms for vitamin D?

Vitamin D deficiency results in decreased absorption of calcium and phosphorus. As a result, prolonged vitamin D deficiency has a negative impact on bone mineralization.

The best source of Vitamin D is sunlight. It is particularly important for individuals with limited sun exposure to include good sources of vitamin D in their diets. Homebound individuals, people living in northern latitudes, individuals who wear clothing that completely covers the body, and individuals working in occupations that prevent exposure to sunlight are at risk for vitamin D deficiency.
