Scottish Dessert Raspberry-Cranachan

A Very Happy Thanksgiving to all my friends.

This Monday I sat for a chat session where a friend from England shares an excellent Scottish dining experience with me. Her husband was there for his business trip and you know girls can never miss to pack the bag be a part of the journey where there is ample scope to shop and dine specially when New year is so near and the good news this time fortunately they met few of their Scottish friend. Now these hungry Scot friends take them for a treat to Boisdale of Belgravia, which is one of London’s most fashionable haunts of highland hospitality. “Magnificent restaurant, bar, courtyard and live jazz …. The blood red walls, exuberant tartan décor a unique old style atmosphere mesmerized her while her husband get totally carried away by the hypnotic scent of Cuban cigars and unbelievable collection of whiskey….o… ho! Men will remain men and when it comes to good cigar and wine there are nobody to stop them. It‘s dinner time so poor boy have to return to their dining table after his visit to the Cigar terrace. She told that Boisdale is one of the most iconic restaurants in London for its award winning Scottish menu. The menu sound quiet interesting to me dishes like Raviolo of spinach & sorrel with toasted walnuts, sage & parmesan butter sauce , Handpicked Unpateruised Herbridian Crab with Spiced Avocado,Cornish mutton & wild mushroom pie with rosemary and garlic mashed potato topping , Half a roast free range corn fed Black Leg chicken and few more delectable delicacies, the reason may be because I never tasted Scottish cuisine and somehow I feel very organic, healthy, fresh flavors of countryside. Now that’s what my instinct says talking to my friend but to know the real flavor someday I have to visit Boisdale and give all those a try but for now I am making Raspberry-Cranachan. Truly speaking when she told me about this dessert, since then I am drooling . It is creamy , delicious and what is more appealing for my lazy bones – it is super easy.
This year I decided to rock my Christmas party with this delicious Scottish dessert Raspberry-Cranachan . If you want something different, something Scottish for coming parties then don’t miss it .

Ingredients:
Double cream 1/2 cup
Raspberry puree 1/4 cup
Toasted oatmeal 2 table spoon
Scottish whisky 1 teaspoon
Fresh raspberries 6
Scottish honey 1 table spoon or to taste
Leaf gelatin 1g

Procedure:

Oats can easily burn so with little care, scatter them on to a baking tray and toast under grill or in a low oven until golden brown.Your toasted oatmeal is ready.
Soak gelatin leaf in cold water for 10 minutes. Whip double cream to soft peak. Now gently fold in the raspberry puree, honey( if you can get the Scottish one go for the regular honey), whisky(any good malt whisky will do) and the toasted oatmeal with your spatula. Drain and melt the gelatin make sure not to boil it.
Then fold it in to the cream mix. Keep it in refrigerator for 30 minutes to 1 hour before serving. Serve it in individual serving glass or dishes garnish with honey glazed raspberry (toss fresh raspberry in warm honey) and then drizzle this warm honey with whisky over it. This whisky not only add a Scottish taste but give awesome kick to the flavor. Your delicious, creamy traditional Scottish dessert is ready.

*To make it more healthy  instead of double cream use  equal quantity whipping cream and fromage frais, instead of whisky you can use brandy or apple juice. Yes taste will definitely differ but in festive parties healthy you is more important to your family and friends.

So enjoy!
Be Happy And Stay Healthy.

Thank You From Code Pink Fitness Boot Camp!

Code Pink Boot Camp is about to finish out its third year! Code 10 is our final session of this year, which will begin on November 29th and finish just before Christmas on December 24th.

Congratulations and THANK YOU to all who have played a part in these thrilling three years! From the very begining it was my goal to create a fitness program that was fun and comfortable for women, yet challenging enough to see and feel amazing results. We began in Orange County, CA and quickly expanded into the Phoenix/Scottsdale area, then last year we found ourselves in the Denver region and last month opened a little camp in Lake Oswego, Oregon.

I am happy to say hundreds of women, each year have found success with Code Pink Boot Camp. Some began camp to just lose a few extra pounds, but stayed because they found a sense of group camaradarie with new boot camp friends and decided to stay for reasons beyond their expectations.

Our trainers are some of the finest! They sincerly care about their campers and take the time to encourage, motivate and educate their campers! We are saying good-bye to Christian, Danielle and Gabby this year. We wish them great success in their new endevours and will miss them greatly!

Christian's camp in Laguna Beach is now being taught by Anna Shaw. We are very excited to have the bright energy Anna brings! Those of you in the Laguna Beach area, please come and enjoy a camp with Anna! Gabby will be grabbing her Kettlbells and making her new way! Good luck Gabby, we hope to have you back to sub when you can! We look forward to welcoming Debby Dowling into coaching the San Clemente and Dana Point camps. Debby comes to us from the Chicago area and with a wealth of experience and education. We are excited to welcome her, and welcome all the campers into her camp! With great sadness comes the good-bye to Danielle White. Danielle was one of our first Code Pink Boot Camp trainers and always led a fun and energetic camp. I know she has many fans! She has taught early morning in RSM, mid-morning in Ladera/MV, and evening in Irvine. We wish Danielle happiness in her new ventures. In January, I will be taking over Danielle's camps. I am excited to be teaching these camps until the perfect new trainer is found and trained to take over. So, I would be thrilled to have you in my camp! I don't teach much anymore, so this will be a great treat for me (and you I hope)!

I invite you to invite your friends to our final boot camp of 2010, which marks the finish of our 3rd year. Please pass on this gift code SAVE25. You may use it, or your friend may use it to register for Code 10 and save $25.00.

Thanksgiving Myth! Eating turkey makes people especially drowsy:

Not so. Here, the myth is that the tryptophan in turkey causes the drowsiness. This amino acid is known to cause drowsiness, but the truth is that there's as much tryptophan in pork and cheese as there is in turkey. What's more, researchers noted that for tryptophan to promote sleep, you need to ingest it on an empty stomach (with no protein present) - something that's unlikely at Thanksgiving or Christmas dinner. Other factors are probably to blame for post-meal drowsiness: any big meal can make you sleepy because of a decrease in blood flow and oxygenation to the brain. Your body is desperately trying to handle the sheer volume that is the Thanksgiving Meal!
And then, of course, there's the wine!

Thanksgiving Health Tips

Believe it or not, Thanksgiving (and then ultimately the end of the semester) is right around the corner. For me, Thanksgiving is the kick off to the holiday season. It gets you in that festive mood and it brings way to the Winter season. For me, Thanksgiving is me second favorite holiday behind Christmas. I just love the whole thing about the holiday. You have Christmas songs starting to play on B101, there are football games all day long (which is a nice change to the Sunday routine), family and friends coming over, and yes- food! Massive amounts of homade homecooked food. I am more guilty than any when it comes to the norious over eating on Thanksgiving. My day usually starts will a few devil eggs and ends with apple pie and icecream (with some turkey and stuffing thrown in there). It is no wonder, to me atleast, that the holidays are a dieter's nightmare. You like to think you have self control, but when there's 10 different appetizers and 15 different kinds of desserts self control goes out the window. With that said, there are some "tips" I found online that may help you achieve a "Thinner Thanksgiving". Here are just a few of the tips. Its worth a shot to try them out:

Get Active- Create a calorie deficit by eating less and exercising more before the holiday rush

Eat Breakfast- By having a small but filling meal in the morning helps control your appetite

Police your portions- This is by far the hardest of the bunch, but try it any way. When eating, go for the foods you normally don't have all year around.

If this is a blog that interests you or is something that you can relate to, you can check out the full story with all the tips at :  Thinner Thanksgiving

I hope you all enjoy the mini vacation before finals and if you don't want to fill yourself like a hibernating bear at thanksgiving dinner, try a few of these tips. I know I will!

Mulled Apple Cider

Mulled apple cider is one of my favorite warm up drink in winter, not because it is absolutely delicious but with it every sip I remember those colorful school days when we bunch of friends use to sit in our favorite roof top joints in a friends place and her Mom make this delicious spicy apple cider for us. I still remember how some of my friends shared stories about their secret crush and sobbed when they lost them you know why………… because all happen from 5th floor roof top and those poor handsome guys crossing roads never get to know that from such grand hill top there are sweeties and cuties pouring their heart out!...... sound hilarious yes they are like that but fortunately all those crazy girls get their Mr. Perfect and are happily married! Some of them are out of contact and I don’t know where on earth they are but till today in a chilled winter night whenever I make a mug of this apple cider for me and sit in my balcony watch the night sky I remember those moments even though those memories gift me wet eyelids ! Ok now I want to stop this emo journey and give you this delicious soul soother Mulled Apple Cider recipe. I am sure if you shared it with your loved ones in a chilled winter there will be some stories that you will love to remember!

Ingredients:
Apple cider 4 cups
Cinnamon sticks 1/2
Nutmeg 1/4 tea spoon
Clove 1
Lemon juice 2 table spoon
Orange zest 1 table spoon
Brown sugar 3 table spoon (more or less to taste)

Procedure:

Place apple cider in a medium sauce pan in a slow flame. Add all the other ingredients except lemon juice and orange zest. Let it simmer half covered for 15 to 20 minutes in a very low flame. Within this time all the spices will mingle well to give you that everlasting refreshing aroma. Then add the orange zest and the lemon juice and put off the flame and cover it for a minute. Strain it through a fine mesh strainer and serve hot with a cinnamon stick and a spiral fresh orange rind- these is a simple garnish tip you may use or may not . To mull something generally means to spice and heat it so now you know why this is called Mulled apple cider. Relax and sip this delicious perfect fall drink.
Have A Lovely Weekend!

Be Happy And Stay Healthy.

How Much Water Do You Need?

http://www.howyoucanhaveoptimumhealth.com

How Much Water Do You Need?

Some recent research suggests that increased amounts of water
— such as the recommended eight 8-ounce glasses of water a day
— It is my belief that there are huge in health benefits drinking
pure clean unflavored water.

Most people who are in good physical health get enough fluids by
drinking water but other beverages do not count when they're thirsty,
and I also believe that drinking a beverage with each of their meals
disrupts the digestion process.

If you're not sure about your hydration level, look at your urine. If it's clear, you're in good shape. If it's dark, you're probably dehydrated or toxic.

My rule is to drink half your body weight in ounces.

Enjoy Thanksgiving Dinner: Not Stressgiving Dinner!:

Good Morning!

Most of us have started the process of planning our Thanksgiving Meal. As we do so I invite you to concentrate on making the experience of: the planning, the cooking, the time with family and the eating of your bounty a joyful and grateful experience. Each time you find yourself getting a little irritated or stressed, take a breath and remember the intent of this special holiday. It was meant to be a time of thanks not a time of stress. That includes emotional stress, chemical stress and physical stress. Enjoy your meal, savour each bite. take your time and savour each moment with family.
Blessings to you all!
Dr Pia

How to Enjoy Thanksgiving Dinner without the unwanted stuffing
Most people gain 10-15 lbs over the holiday season. Not only does that cause the potential for health problems but it also causes the body additional stress.
This added stress also causes our immune function to be lowered providing the potential for colds and flu etc. Make giving thanks with family and friends the focus of your gathering.

The key to unwanted “ stuffing “ is everything in moderation. If you are cooking you have control over what is served at the T.G table, if not you have the choice over what you consume. “ Ah Ha” you can’t blame anyone else!

Here are a few tips to help you navigate the most fattening (2000 calories on average) meal of the year.

  1. Eat breakfast. Don’t go hungry as you have the potential to overeat.
  2. Drink plenty of water up to hour before and one hour after the meal
  3. Eat slowly. It takes 20 mins for the brain to catch up and register you are full.
  4. Say no to seconds. You body can only process so much at once.
  5. Careful with alcohol. You have a tendency to eat more and it is loaded with calories
  6. Big one! Don’t take more of the fattening food home with you. No one needs more of the most fattening meal of the year
  7. Get some exercise either before or after the meal. Sign up for a Turkey Trot. Fun for all and a great way to give to charity!
  8. Watch portion control. There are often a lot more items on the menu than a typical meal. Take a little of everything.

Here is my ideal Thanksgiving Dinner…

Start: Butternut/ Pumpkin soup.

Dinner: Roasted organic turkey breast w/ herbs and a little sea salt
Roasted Root Vegetables
Green beans with garlic and almonds
Brussels Spouts
Whole grain wild rice or Quinoa
Arugala Salad

Desert: Probably skip it. But if I was serving it would be Baked Apples

If you are Vegetarian or Vegan you can substitute the turkey for Tempeh or Seiten, and add black beans to the rice or quinoa.

Function and Feeling great!

It makes my day when the body the mind and the spirit and in alignment.

Hi Doctor Pia,
I just wanted to let you know that I did all of my measurements this morning after this program and have lost over 11 inches all over my body along with those 13 pounds! I will be weighing in again tomorrow and will keep with this ritual weekly to keep myself on track. I haven't brought in a lot of new foods, but I am being very keen on what I am feeling and it has been interesting to notice and has me really want to stick with what I have been doing more and more because that is when I feel my best!!

I was talking to my mom this morning about doing it as well. She is looking for the jump start and something that can sustain. I told her that this was the best thing I have done! I know you wouldn't necessarily be able to test her before starting, but would you have any suggestions on how she might be able to do it if she chooses to? She said she is thinking about it and would maybe do something after the first of the year.

Anyways, I keep sharing it and can't thank you enough for how great I feel!! Life is good!

I will stop by and pick up my stuff after work and put the check under the mat. I will also write that testimonial very soon for you!!
Thanks again!
With much love and respect,
Angel:)

Japanese Clear Soup (Suimono)

It was a total mess last week I got hay fever and you know what happens in it, itchy, puffy, watery eyes and red, stuffy nose- OMG it’s terrible! I am not feeling to have anything, my taste buds are completely flat. Then Maa (Mother) came as a savior as she always does, she make a Japanese Clear Soup for me which is not a fill you- up- kind of meal but a delicious refreshing Asian soup. I am ok now and so want to share that easy yet delicious Japanese Clear Soup –Suimono's recipe with you.

Cooked shrimp 4 to 5(optional)

Procedure:

In a large saucepan bring chicken stock to simmer. Stir in sherry and soya sauce. Simmer for few minutes. Top with all those other ingredients. Cook for another half minutes and you are done. What is an Antioxidant?

What is an Antioxidant?

According to the National Cancer Institute "antioxidants are substances that may protect cells from the damage caused by unstable molecules known as free radicals. Examples of antioxidants include beta-carotene, lycopene, vitamins C and E, and other substances. Many of these antioxidant substances come from fruits and vegetables."

Fruits and vegetables contain a powerful array of antioxidants that offer protection for our bodies. Beta-carotene is found in many fruits and vegetables that are orange in color, including carrots, Some green leafy vegetables such as spinach and kale are also rich in beta-carotene.

•Lutein, best known for its association with healthy eyes, is abundant in green, leafy vegetables such as spinach and kale.

•Lycopene is a potent antioxidant found in abundance in tomatoes.

•Vitamin C is found in many fruits and vegetables such as apples, oranges, pineapple, acerola cherries, papaya, carrots, parsley, kale, broccoli, cabbage, spinach, and tomatoes.

•Vitamin E is a powerful antioxidant found in green leafy vegetables such as spinach and broccoli.

Health Tips For The Thanksgiving Day Turkey

Tips For The Thanksgiving Day Turkey

If you're hosting a small gathering, buy a turkey breast rather than the whole bird, as breast meat is lower in calories than dark meat. If you do buy a whole turkey, avoid "self-basting" turkeys, as they often contain added fat. And--it goes without saying--stay away from the deep fryer this year, and roast or smoke the turkey.Stuff the turkey cavity with whole or halved onions, halved lemons or apples, and sprigs of fresh herbs such as sage, marjoram, thyme, and/or rosemary.Rather than rubbing the skin with butter or oil, spray it with an oil spray and season it with salt and pepper.

Public School Lunch: It's time for a change

I went to public school my entire life. While all of my friends in the neighborhood went to Catholic school. my parents just didn't have the money to send me there. Growing up that was a little difficult to swallow but as I look back at it now it wasn't such a big deal. I turned out just fine with a Public school education. What wasn't fine, was the school lunches. It may be difficult to understand if you did not go to a public school, but lunch time was awful. I would BEG my mom to pack me a lunch in the morning just so I didn't have to eat the slop they were serving. I remember times where I would stand in line with the other kids and try to guess what they were serving for lunch. The meatloaf wasn't made from beef, spaghetti and meatballs looked like 5 day old pasta with broken up hamburgers in it. They would even attempt to serve fish. How some kids got past the smell of it is beyond me. It kind of reminds me of a cross between rotten fish and feet. Delicious I know. On Friday's, they would treat us to pizza. The only problem is the pizza was impossible to chew. THey would microwave this mini round pizzas by the dozens. The other crust was like chewing rubber and the inner crust just tasted like cardboard. I am no doctor (yet), but I know that can't be healthy for a growing child.

In New York, they are making the first step in making Public School food better, more nutritious. In an article in the New York Times, schools are participating in aprogram called Wellness In Schools. The program is a non-profit program where Culinary Graduates are hired by the school to make a delicious and nutrition menu for the kids. Listen, it is not a mystery why we are the fattest country in America. I know fast food chains like McDonalds is a major contributor, but so are the lunches in school. Kids at an early age are forced to eat microwaved slop for lunch. This, with no doubt in my mind, leads to future poor eating habits. With the government putting their hands in everything else, I think it is about time that they start putting more focus on what is being served at the lunch tables. The best way to solve a problem is to catch it early. Kids in public elementary schools shouldn't have to eat hockey puck hamburgers for lunch. A grilled chicken sandwich with a side of apple slices and confetti corn sounds alot better.

I have some crazy friends who think time doesn’t matter at all and they drop in any time, the other day two of them came 11 at night when I was having a diet salad with some bread and boiled egg just to skip cooking my dinner but God have some different plan and yes I have to cook for them something that is delicious yet quick because I want my dishes to be served as dinner and not breakfast….hahahah! The good thing is I have very few things in my freezer , just have some leftover rice and 4 to 6 tiger shrimp and little veggies and with this little ingredients I have to please my two dear hungry friends! The Year in NFL Concussions: So Far

One of my most favorite things to do is sit on the couch and watch football all sunday afternoon. I am also really big into Fantasy Football. I am constantly flipping from game to game checking out how my team (and my opponent's team) is doing. From Noon to Midnight, I am watching football. Even when I am away the TV (either studying or working), I get text and video updates sent to my phone. I am clearly obsessed.

Each week as I sit glued to the TV with some chips and the occassional brew, I  can't help but notice how many players are leaving the game with concussions each week. Now I know football is a "gladiator sport", but it just seems that this year more than any other, there are more concussions. I have noticed it, my friends have noticed it, and even the NFL noticed. Concussions used to be considered  "minor" injuries in the NFL because a player may only miss 1-2 weeks tops. NOw, with all the research being done on the short and long term effects of blows to the head, it is no longer looked upon in that way. The NFL has gone as far as changing the rules on how and when a defensive player can hit an offensive player. The evidence is overwhelming on the effects of concussions. If you click on this website, you will see a few of the effects that these players have endured in the past : Sport's Concussions . I have used this website in the past because it does a really nice job of presenting ideas (in this case the effects of concussions) in list form.

As a side note, through 6 weeks in the NFL, there is estimated to have already been 46 concussions. That is a scary and oftly high number. If you haven't gotten a chance to watch much football this year, here is a video of some of the more violent concussions thus far this year.

Concussions Thus Far
